How to Grow Grapes for Excellent Wine


I think it quite safe to say that more has been written about the cultivation of grapes than has - or ever will be - written about any other fruit. This is not surpris?ing, considering that the grape is probably the oldest of known fruits.

Surprisingly, grapes do not need loads of manures and fertilizers; they grow well on quite poor soils and need little after-attention. The roots will search out and find what they want; all we have to concern ourselves with is where to put the top-growth - the vine itself.

If one wall of your house faces south, south-west or even west, that problem is solved very easily. If you cannot plant the vine under that particular wall, plant it round the corner and train the vine round to the sunny side of the house. Grapes may be grown in the open garden in similar fashion to loganberries, or they may be trained over sheds, garages, out-houses and such-like.

Vines are not expensive, and if two are planted, the yield may be regarded as fantastic when considering the value of the wine that may be made for many years.

Planting is best carried out in autumn and in any case before Christmas. If planting against a wall, take out a hole about two feet each way and plant so that the stem of the vine is about fifteen inches away from the wall itself. Dig deeply and work in any compost that may be available and some builders' rubble if you can get some. A dusting of lime forked in will be helpful. Spread out the roots well and plant as recommended for fruit trees.

Having planted the vine, spread a little manure above the roots: this will not be necessary in subsequent seasons, but the vine will benefit from a mulch each spring if you can give it one.

Vines must not be allowed to fruit the first season; therefore they must be cut back to about four buds.

Having planted the vine and cut it back, we must decide how to train it to cover the wall.

The best plan is to use special wall nails, run wires to and from these and train the vine to the wires.

The four long growths that come from the four buds you left when cutting back are stopped at the bud nearest the growing point. These four leaders are the basis from which the vine will be built up to cover the wall. If flower buds form during the first season, they should be nipped off so that the vine uses its energy producing wood for subsequent fruiting. First-season fruiting often permanently weakens a vine.

When pruning, remem?ber that next year's fruit will be borne on the wood made this year. But we do not want masses of long, straggling growths hanging about all over the place, so during the summer it is best to cut some of them out. Those left to bear next year's fruit should be cut back to five or six buds in autumn or early winter. Only new growth should be cut during the summer; never cut old wood during summer - indeed old wood must never be cut after Christmas, as this can cause profuse bleeding which may be quite impossible to stop. By all means cut away some of the old growth to make way for new wood, but if this has not been done before Christmas leave it until the next winter.

Many varieties ripen in September - or earlier if the summer has been good. This is especially advantageous because the weather is still warm enough for a satisfactory fer?ment when you come to make the wine. This is not so important to those who carry out their fermentation in the house, but where it has to be carried on in a shed or outhouse the warm weather is a great help.

It is very important to select the best matched food with any wine; a wrong choice of food can spoil all the fun and taste of a very good wine. Generally, it is conventional that white wine should be drunk with white meat and red wine with red meat. But nowadays, no one just has meat or chips with wine.

As the wine producing regions have increased in number, the taste and flavours of wine have also changed. Before experimenting any new combination one should always consider the flavour factor. This is the only thing that can double your fun or even can spoil all the fun. Another aspect is the acidity; food with less acidity should be preferred most. Acidic wine can be found in those areas where the acidic food is prepared. It is very safe to have the local food with the same region's wine. But there are many regions where foreign wines are sold; food selection is a big problem there.

Salty dishes work well with acidic wine. Sparkling wines like Californian wines or French champagne can be used to refresh the taste of fish dishes. Bubbly wines are used to drink with spicy food. Food from South East Asia (like Thai) is filled with chilly and pepper. These food items are compiled with citrus acid, so wines with acidic taste are with some flavour of sweetness. Wines with lots of fruit are mostly prescribed for this kind of food.

Game birds such as quail, turkey, guinea have earthy taste which is more tasteful than chicken. These are more preferable with white wine, while the red wines should be taken with wild game birds.

Wine and food pairing is a highly subjective and should be fun. There is little mystique behind the marriage between wines and food, but there is some basic compatibility issues- just like people marriages. Wine brings pleasure with any food. Many types of wines can match with many a dish. People all have different palates, cultures and inclinations. Everyone can and will find their own wine and food combinations-- a pair that they will love.

Wine & food matching suggestions
You are more likely to hear food and wine pairing suggestions rather than hard and fast rules. There's considerable room for experimentation and expression of your own personality in pairing wine and food. If you want to talk "rules" of wine and food pairing, the standard is red wine with red meat, white wine with white meat. However, rules are meant to be broken. Wine is fun and drink what you like is always the best rule. Having said that, there are some general guidelines you may find helpful when selecting a wine to enhance your meal for that perfect marriage.

Think of wine as if it was a condiment it should compliment the food. Chardonnay works beautifully with fish because you are matching light to light. Otherwise a full-bodied, heavier wine will overpower a light, delicate dish, and similarly, a lighter style wine will not even register on your flavour meter if you sip it with a hearty steak or roast.

Wine action vs. food reaction
When you drink wine by itself it tastes one way, but when you take a bite of food, the wine tastes different. This is because wine is like a spice. Elements in the wine interact with the food to provide a different taste sensation. Sweet Foods like Italian tomato sauce and honey-mustard glazes make your wine seem drier than it really is, so try an off-dry (slightly sweet) wine to balance the flavour (Riesling or a white blend). Acid Foods like fish served with a squeeze of lemon go well with wines higher in acid (Seyval Blanc, Pinot Grigio). Bitter and Astringent Foods like a mixed green salad of bitter greens and charbroiled meats accentuate a wine's bitterness so complement it with a full-flavoured forward fruity wine like a Cabernet Franc. Big tannic red wines like Norton, and Shiraz wines will go best with your classic grilled steak, as the fat in the meat will tone down the tannin (bitterness) in the wine. Cheeses- in some European countries the best wine is reserved for the cheese course. Red wines -Cabernet Franc & Norton- go well with mild to sharp cheese. Pungent and intensely flavored cheese is better with a sweeter wine like Riesling. Goat Cheeses pair well with dry white wine Chardonnay or Seyval Blanc, while milder cheeses pair best with fruiter red wine. Soft cheese like Camembert and Brie, if not over ripe, pair well with just about any red wine including Cabernet Franc or a Merritage. Chocolate may upset the taste of wine. Some claim that a Cabernet Franc will do the trick for a perfect matching of wine and chocolate. Or just have wine as a dessert by its self, a Late Harvest Wine like a Vidal Blanc or Veramar DOra.
