Chicken in Wine - A Versatile Recipe
The following is a simplified version of the classic French coq au vin that can easily be prepared by beginners, practically cooks itself and tastes wonderful. Moreover, it can be adapted in many ways to use ingredients you happen to have in your pantry.
1. Basic Ingredients
- One chicken, cut up (or equivalent in chicken parts - thighs work well)
- 2 cups cut-up vegetables (possibly mushrooms, onions, bell peppers, see section "Variations"
- 1-2 cups wine. Do not use "cooking wine" but rather any simple, but drinkable red or white wine.
- olive oil
2. Preparation
- Heat some olive oil in large frying pan, with lid removed. Add chicken parts in small batches and brown them.
- Transfer browned chicken to plate, add vegetables to pan and sautee for 2-3 minutes.
- Add chicken parts to pan
- Add wine
-Let mixture come to a boil, then reduce heat to low and simmer for 45-50 minute with lid closed, turning chicken occasionally.
- Add salt and pepper to taste
- Serve with rice, pasta or just some good baguette, and of course some wine.
3. Variations
- mushrooms and red wine
- mushrooms, spring onions and white wine
- red onions, garlic and red wine
- tomatoes, bell peppers and red wine
- artichoke hearts, small potatoes and white wine
Use your imagination!

Ch Le Gravillot - Lalande de Pomerol
Many of the Bordeaux 'satellite' appellations have emerged in recent years to compete with the big names of the Medoc, St. Emilion, and Pomerol. This lovely wine from Lalande-de-Pomerol is made by Vincent Brunot, who took over the Chateau in 1998. The vineyard is only 10 acres in size and is 100% Merlot. Grown on the clay/gravel of the area, the wine has exceptional tannin for this 'soft' varietal. The Brunot family are all enologists and have greatly improved the quality of this wine to a level that is world-class. This dry red wine is aged for 18 months in new French and American oak barriques. A luscious wine with plenty of oak. We had the 2000 vintage and it went flying out the door with many upset customers looking for more. Get an ample supply before it is all snatched up again! Elegant gift from France! GLP02 GLP02

YOUVE heard of the Napa Valley, of course, and if you like chardonnay you probably know about the Edna Valley as well. But what do you know about the Mimbres Valley or the Umpqua Valley? Sonoma is a familiar name, but what about Sonoita? They are all American Viticultural Areas, or A.V.A.s as wine people call them.
